How Carpigiani Gelato University is structured

Thanks to an extensive curriculum of theoretical and hands-on classes, Carpigiani Gelato University students can learn all the secrets of balancing gelato recipes and take advantage of the world's largest gelato production space for a hands-on experience. In its 20 years of operation, Gelato University has trained more than 70,000 students at its 21 campuses located in 20 countries around the world. Its in-class and online courses are available in 13 different languages.

In 2015 the course catalog expanded to include two new specialization schools: Carpigiani Gelato Pastry University and Gelato University for Foodservice Professionals.

The instructors for Foodservice Professionals are available for both individual and group classes. The courses offered, which are available both online and in class, focus on the balancing of recipes for foodservice and new techniques for storing mixes and gelato.

 



Carpigiani training by the numbers

Each year Carpigiani Gelato University welcomes more than 2,000 students from around the globe (4,000 trained worldwide, also considering international schools, courses, and campuses). Students can choose from around 300 courses taught in a variety of languages: Italian, English, French, Spanish, German, Japanese, and Russian. Over the years the university has established important academic partnerships with culinary schools and vocational colleges.

As noted, Carpigiani Gelato University's courses are available both online and in person at its 21 campuses around the world in order to meet the demand of students from all over the globe.

The courses’ structure also takes into account the varying needs of the students, starting from the basic level for those who have no experience making artisanal gelato, and then moving on to intermediate and advanced classes with the possibility of also receiving individual, highly personalized lessons.

For gelato and foodservice professionals there are specialization courses on an array of topics such as savory gelato, low-glycemic-impact gelato, and dairy-free gelato. For specific requests Carpigiani Gelato University staff will provide support to those interested, helping them choose the course that best suits their goals.

Enrollment periods

Carpigiani Gelato University courses can be enrolled in at any time of the year thanks to a full calendar of classes. But keep in mind that the courses are limited in number: once the maximum number of participants has been reached you’ll have to wait for the next one.

At the end of each course a certificate of attendance is issued to all those who have attended more than 80% of the classes and taken an exam to evaluate the skills acquired.
